Cheese Bruschetta


  • 1 Baguette sliced
  • 2 Diced tomatoes
  • Basil dried or freshly chopped
  • Oregano dried or freshly chopped
  • Pinch of salt
  • 1 tbsp Evoo (Extra virgin olive oil)
  • Pesto Genovese (tsp per slice baguette)
  • Shredded mozzarella
  • Rucola


Preheat the oven on 200°C (400F). Put the sliced baguette in the oven for about 3 minutes. Marinate the diced tomatoes with the evoo, oregano, basil and salt. Take the baguettes out and spread pesto on it (about a teaspoon per slice), add the diced tomatoes on each slice and top with shredded mozzarella. Put it back in the oven until the cheese is melted for about 7 minutes. Then top it off with fresh rucola and enjoy!
