Chia Pudding

Mango Coconut Chia Pudding. Deliciously fresh!

This is one of those things that never gets old, Chia pudding.  It’s simple, fresh, super healthy, versatile (I can go on and on) and it tastes really good.

Did I mention it is really simple to make, like really simple?? Basically you can’t go wrong with Chia pudding.

Before sharing this awesome really simple super healthy recipe let’s talk Chia seeds (don’t worry I’ll keep it short and simple).

“Chia” is the ancient Mayan word for “Strength”.. smart people Mayans.  Chia seeds are packed with protein, omega -3 fatty acids and of course fibers, in fact almost ALL carbs in the little kickazz seeds are fibers. Yay! Did I mention that these little seeds have a good amount of antioxidants, calcium and magnesium?? Well they do. Awesomeness.

Chia seeds deserve to be called ” Super food” because, let’s be honest, these little kickazz seeds totally are!

See short and simple.

OK so for this delicious recipe you’ll need:

  • One can of coconut milk
  • 3 (heaping) tbsp Chia seeds
  • 2 tbsp Honey
  • 1 tsp cinnamon (optional)


Mix all of the ingredients in a jar or a bowl. Put it in the fridge to set overnight. Remove it from the fridge (duh) and see if the little super seeds have been soaking up the coconut milk to a pudding consistency. Top it with Mango (or any fruits, nuts etc) and drizzle a little bit of cinnamon on top.

There you go a nice fresh healthy delicious breakfast / dessert.
