Crumbly Coconut Cake

This delicious coconut bread is such a treat!

When I first made this crumble cake I did not know what I was doing (that happens rarely). When I selected the ingredients I expected to get a nice fluffy cake. *failure alert!* Oh how big was the disappointment when I got the cake out of the oven. I thought about trowing it away but since my mom, who wasn’t present, gave me the ‘don’t you dare to throw that away’ look I got scared and decided to eat it.

One bite and I knew I was blessed with a delicious crumble cake! Mom is always right.

The great thing about this cake is the consistency, it is very crumbly and that is exactly what I love about it. Especially with a scoop of home made banana ice cream.. *drool*


  • 50gr shredded coconut
  • 300gr oat flour
  • 1 whole egg
  • 3 egg whites
  • 15 gr baking powder
  • 50gr coconut oil
  • 5gr stevia
  • 200ml coconut milk

Mix all of the ingredients well, put it in a cake pan and bake at 170°C /340°F for about 20 min (depending on the oven) in a pre-heated oven. A little piece of heaven with banana ice cream while still a bit warm..
