Frittata bites

I love making these little Frittata bites, they are nutritious, healthy and so good! It only takes about 10 minutes to prep them. You can mix and match whatever types of vegetables you like or have at hand, add bacon (!) or sun dried tomatoes and pesto.. yummmmmm

This recipe makes 18 Frittata bites. Perfect for food prepping.


  • 12 whole eggs, beaten
  • Chopped up vegetables, I used:
    • 1/5 zucchini
    • 1 red onion
    • 1 regular onion
    • 1 leek
    • 1/5 bell pepper
  • Grated mozarella cheese
  • Seasoning of choice, I used
    • Salt
    • Paprika powder
    • Cayenne pepper
    • Black pepper
    • Curry powder


Preheat the oven at 180°C / 350°F. Grease a muffin tin (spray oil). Add about one tablespoon of vegetables in each muffin cup. Add the beaten eggs and the seasoning. Stir it a little bit then add the grated cheese. Bake for about 20 minutes.
