Most Basic Vegan Pumpkin Soup


  • 1 pumpkin
  • 3 onions
  • Vegetable broth
  • 1 liter Boiled water
  • Black pepper
  • Hamilayan salt
  • Olive oil
  • Garlic
  • Rozemary


Preheat the oven at 230°C. Cut the pumpkin in half or 3 big parts depending on the size. Put the pumkin and onions (don’t peel the onions) on parchment paper in the oven for about 20 minutes. When the pumpkin and onions are softened put it in a blender.

Make sure to peel the onions before! Mix a little bit of water wit the vegetable broth until it is dissolved. Add the broth and all of the seasoning and oil and blend away. Slowly add splashes of boiled water to get the consistency you desire.
