My MBF (mega best friend) Tina came over today and she suggested to make Peanut Butter Protein Bites so we started creating it. But in the process I felt like experimenting. I wanted to create a low carb guilt free but filling snack that is not too sweet and super high in protein. I decided to create cookies, because we all love cookies. When it was time for the last batch to cook I decided to make a tart.. and boy was it good!
- 650 gr Peanut Butter
- 120 gr Whey Protein Vanilla
- 5 ml Vanilla Essence
- 2 tbs Honey
- 100 gr Almond flour
- 2 Whole Eggs
- 1/2 Apple, skinless and in very thin slices
- 50 ml Almond Milk
Makes 20 cookies and 3 tarts.
Preheat the oven on 175°C (350 F). Mix the wet ingredients first, add the dry and mix it all together. Use a mixer if you have but not necessarily. The batter will be crumbly but sticky.
Cookies: make 20 little balls of the batter, put it on a baking tray on parchment paper. Then press the balls down a bit. Bake in the oven for about 15 min.
Tarts: in a small oven dish put the batter until it covers the inside completely but leave the batter crumbly!!! Don’t press it down. Add the thinly sliced apples add cinnamon to taste and cover it with more crumbly batter. Bake in the oven for about 15 minutes.
