Sautéed Chorizo & Asparagus in Red Wine

Aahh whenever I hear the word Tapas I immediately feel so warm inside. Enjoying a delicious meal together with family and friends always makes me feel good.

These slices of spicy sausage and asparagus in a rich glaze of garlic,  red wine will disappear quickly from a tapas spread.. try it, you’ll see!


  • 1 tbsp olive oil
  • 2 cloves of garlic
  • 2 rosemary sprigs
  • 300 gr of cured spicy chorizo sliced
  • 250 ml/ 1 cup red wine
  • Baby asparagus
  • Pinch of salt
  • Optional: 1 tbsp honey


Heat 1 tablespoon of olive oil in a frying pan and add sliced garlic, cook over medium heat for 1 minute, then add rosemary sprigs and cook for 1 minute longer. Add the baby asparagus and salt and cook for another 2 minutes.

Add chorizo sliced into rounds and fry until it releases red liquid it should take about 2 minutes.

Pour the wine (and honey) all over the chorizo and cook until it’s reduced in volume so the sauce just coats the chorizo. It will take about 5 minutes.

It goes well with some crusty whole wheat bread, unless you’re into a low carb diet then put the bread down .. s l o w l y!
